Cold Avocado & Cucumber Soup

This soup is perfect on a hot summer day or served in shot glasses as a starter for an impromptu dinner party.

Ingredients:
  • (1) Large Cucumber, peeled (or not) and roughly chopped to fit in blender
  • (1) Avocado, pitted and peeled
  • (3) Scallions, white and pale green parts only
  • 1/2 cup plain yogurt
  • 1 cup vegetable broth or cold water
  • 1/4 tsp salt (optional)

If you like some spice you can add 1 tsp hot sauce

Instructions:
  1. Put all ingredients in blender or food processor
  2. Turn on and blend until mixture is chunky or as smooth as you like (about 1 minute)
  3. Serve immediately or put in refrigerator to chill.
Garnish options:
  • Toasted green pumpkin seeds
  • Finely diced cucumber and avocado
  • Diced mango
