Cold Avocado & Cucumber Soup
This soup is perfect on a hot summer day or served in shot glasses as a starter for an impromptu dinner party.
Ingredients:
- (1) Large Cucumber, peeled (or not) and roughly chopped to fit in blender
- (1) Avocado, pitted and peeled
- (3) Scallions, white and pale green parts only
- 1/2 cup plain yogurt
- 1 cup vegetable broth or cold water
- 1/4 tsp salt (optional)
If you like some spice you can add 1 tsp hot sauce
Instructions:
- Put all ingredients in blender or food processor
- Turn on and blend until mixture is chunky or as smooth as you like (about 1 minute)
- Serve immediately or put in refrigerator to chill.
Garnish options:
- Toasted green pumpkin seeds
- Finely diced cucumber and avocado
- Diced mango
