Pão de Queijo (Brazilian Cheese Bread)

As a kid I lived in Rio de Janeiro for 4 years. As you entered the bakery the display cases were overflowing with this delicious cheese bread and the aroma was impossible to ignore. My sister and I would beg my mom to buy some fresh, hot Pao de Queijo. We would gobble them up before we left the bakery. Over the years I have tried to recreate this childhood food memory and this is the closest I have gotten. These are great little bread to accompany a salad or as a small snack before dinner.

They take no time at all to make and must be eaten right out of the oven for the full affect.

Ingredients:
  • 1 egg
  • 1/3 cup olive oil
  • 2/3 cup milk
  • 1 1/2 cups of Tapioca Flour
  • 1/2 cup grated cheese (best results are from Mexican Queso Fresco)
  • 1 tsp salt
Instructions:
  • Preheat oven to 400 F. Grease 2-3 mini muffin tins. Put all ingredients in a blend and pulse until smooth.
  • Pour batter into mini muffin tins. Bake for 15-20 minutes until puffy and lightly browned. Remove from oven and let cool on rack for a few minutes.
  • Pop in mouth and enjoy!
  • Note: Add chopped chives or other herbs to add to flavor and variety of cheese breads.
