Snicker Doodles

This recipe was converted by me from a cookie recipe my grandmother had given me.  The cookies should have a soft, cake like inside with and more crunchy outside.  They are an addicting sweet cookie that everyone loves.  Eat them plain or with a nice cold glass of milk fresh off the pan!  YUMMMMMMMMMM

Ingredients:
  • Butter – 1 cup
  • Granulated Sugar – 1 1/4 cup + 1/2 cup to roll cookies
  • Vanilla – 1 tsp
  • Eggs – 2 large
  • Baking Soda – 1 tsp
  • Xanthan Gum – 1/2 tsp
  • Gluten Free Flour Mixture – 2 cups
  • Sweet White Rice Flour – 1/2 cup
  • Cinnamon – 2 tbsp to roll cookies in
Instructions:
  • Preheat oven to 350 degrees and lightly grease large cookie sheet with cooking spray.
  • In a large bowl beat together softened butter and sugar.
  • Add eggs and vanilla and mix until a soft yellow dough is formed.
  • Add baking soda, xanthan gum, brown rice flour mix, and sweet white rice flour.  Beat together until dough is formed.  Dough will be slightly sticky, this is fine.
  • In a separate small bowl combine 1/2 cup sugar and cinnamon.
  • Roll 1 inch diameter dough balls through cinnamon mixture and place about 1 inch apart from each other.  Bake for 11-13 minutes or until golden on outside.
