Snicker Doodles
This recipe was converted by me from a cookie recipe my grandmother had given me. The cookies should have a soft, cake like inside with and more crunchy outside. They are an addicting sweet cookie that everyone loves. Eat them plain or with a nice cold glass of milk fresh off the pan! YUMMMMMMMMMM
Ingredients:
- Butter – 1 cup
- Granulated Sugar – 1 1/4 cup + 1/2 cup to roll cookies
- Vanilla – 1 tsp
- Eggs – 2 large
- Baking Soda – 1 tsp
- Xanthan Gum – 1/2 tsp
- Gluten Free Flour Mixture – 2 cups
- Sweet White Rice Flour – 1/2 cup
- Cinnamon – 2 tbsp to roll cookies in
Instructions:
- Preheat oven to 350 degrees and lightly grease large cookie sheet with cooking spray.
- In a large bowl beat together softened butter and sugar.
- Add eggs and vanilla and mix until a soft yellow dough is formed.
- Add baking soda, xanthan gum, brown rice flour mix, and sweet white rice flour. Beat together until dough is formed. Dough will be slightly sticky, this is fine.
- In a separate small bowl combine 1/2 cup sugar and cinnamon.
- Roll 1 inch diameter dough balls through cinnamon mixture and place about 1 inch apart from each other. Bake for 11-13 minutes or until golden on outside.
