Super-Duper Chocolate Cookies
This is a wonderful gluten-free recipe that everyone loves, even non-gluten-free people. It’s rich with chocolate and has a soft inside and crunchy outside. The gluten-free flour mix is vital to make the recipe light, and not grainy like other gluten free deserts.
Ingredients:
- Unsalted butter- 1/2 cup
- Granulated sugar- 1/3 cup
- Vanilla extract- 1 teaspoon
- Gluten Free Flour Mixture– 3/4 cup
- Sweet white rice flour- 2 tablespoons
- Unsweetened cocoa powder- 1/4 cup
- Xanthan gum- 1/4 teaspoon
- Salt- a large pinch
- Dark chocolate chips- 1/2 cup
- Chopped walnuts- 1/2 cup
Instructions:
- Beat sugar and butter together in a large bowl with electric mixer. Add vanilla and mix well.
- Add gluten-free flour mix, sweet white rice flour, xanthan gum, cocoa powder, and salt. Beat together until a soft dough is formed.
- Fold in walnuts and chocolate chips.
- Shape dough into a ball and wrap in plastic. Place in fridge for 20 minutes.
- Meanwhile preheat oven to 350 degrees. Position rack in center of oven. Lightly grease cookie sheet with cooking spray.
- Get dough. Shape heaping-teaspoon dough into balls and lightly flatten on cookie sheet. Place on cookie sheet 3/4 inch apart and bake for 8-10 minutes. Let cool slightly on cookie sheet then transfer to cooling rack.
